Raw Sweet Potato “Chips” and Patience

Before I started my Raw Challenge I borrowed two crucial appliances from friends — a juicer and a dehydrator.  I had never used either one before, so this was my chance to try something new!

So far I’ve used the dehydrator three times. One experience was a total flop, one was hugely successful, and the other…we’ll see in another 12 hours.

Dehydrating requires planning ahead as well as patience.  You have to think, “Hmmm, I may want dried apples in two days” instead of opening the pantry door to see what looks good at the moment.  I’m a fairly good planner, but patience is not my forte.

I’ve learned that there are different kinds of dehydrators.  Dehydrating raw veggie burgers and crackers does not work well on the round dehydrator that I’m borrowing as it has plastic baskets instead of Teflex sheets.  But a little parchment paper to line the baskets works fairly well if you don’t mind spending time measuring, tracing, and then cutting out five large circles.  Again, the patience thing.

My first experience with the dehydrator was inspired by Aubree Cherie of Living Free.  She made Raw Crispy Sweet Potato Chips and raved about them.  After reading her post and looking at her delicious pictures, I just had to give them a try.  Aubree used a mandolin slicer to slice her sweet potatoes.  I don’t own a mandolin slicer, and there was no way I was going to attempt to chop thin slices of sweet potatoes by hand.  So, in my impatience to start the process, I shot the sweet potatoes through the chute of the food processor.  When I saw the result, I figured that my “chips” would just be a little smaller.  After dehydrating them I realized that I hadn’t thought about the shrinkage factor.  These would be mini-chips.

Okay, so look at my finished sweet potato “chips”.

Now go and look at Aubree’s.  Go ahead…I’ll still be here.

Big difference!  Apparently, patience has its benefits.  In hindsight, slicing a sweet potato by hand would have been much better than making 5 trays of tooth-breaking sweet potato chunks.

So I’m not sharing a recipe today, but I highly recommend that you try Aubree’s recipe, because food that looks like that must taste amazing!

But I’m not giving up.  I may not be patient, but I’m very determined.  We will have sweet potato chips yet!

    My Heather & I are always looking for creative ways to have our sweet potatoes! This looks so wonderful! Is a dehydrater suggested for every kitchen? Or is it a fad like the bread maker?

      Have you ever made sweet potato fries in the oven? We love those! I don’t think many people have a dehydrator. But it sure helps if you are vegetarian or raw. I feel like it was a fad from long ago that is now only used by the people who truly need them.

It took me a while to get used to dehydrating – and I have had some spectacular flops in the raw bread department – one thing where the dehydrator has helped tremendously is anything remotely cracker like. I used to make crackers at night and always just wanted them to be done baking so I could go to sleep. Most of the cracker recipes I use work fine in a dehydrator, so switching to dehydrating instead of baking saved me time – i.e. I would just mix up the dough and get it dehydrating and could go to bed, and voila, crackers in the morning. Sometimes the crackers do not fully dehydrate, but usually the outer edge does , and that is enough for a lunchbox serving, while the rest dehydrates all day.

    I am curious to hear your thoughts on juicing. I have been juicing for a couple of months now, and while it is work, it really seems to be worth it.

      Glad to hear that it takes a while. I think I’m going to look into getting rectangular one. This round one won’t do the crackers and breads, and that’s what I’m most interested in. Love your idea of bread overnight.

      Juicing is delicious! I feel so good after drinking it, but I need to figure out what to do with the pulp. It feels so wasteful to dump it in the compost. Do you have any good recipes for using the pulp in the dehydrator? I also need to check your blog to see if you’ve posted your raw bread successes!

  4. Hey Heather! Thanks so much for trying the sweet potato chip recipe :) I’m sorry they didn’t turn out like you had hoped though. I do think that the thickness of the chips I dehydrated was the biggest factor in their texture. (I just saw a mandolin slicer at a thrift store, I should have picked it up and sent it your way! :))

    I love your comment on the dehydrator as an old fad and now mostly used for people who need them. Especially since my model is from the 80’s, I can relate 😉
