Orange Cilantro Dressing

Orange Cilantro Dressing

I’ve been eating a lot of salads lately, and one way that I can eat more produce is by making my own dressings.  Many pureed fruits and veggies make wonderful raw dressings and sauces, and I’ve been playing with different combinations.  (Don’t listen to your parents, always play with your food!)  This Citrus Cilantro Dressing combines yellow pepper, orange, garlic, and cilantro to create a sweet and spicy dressing that gives an ordinary salad interesting layers of flavor.

I love this dressing on just about any salad or over a bed of spiralized zucchini.

Orange Cilantro Dressing

by Heather

  • 1/2 orange
  • 1 yellow bell pepper
  • 1/3 c. cilantro leaves
  • 3 garlic cloves
  • 1 T. Bragg’s apple cider vinegar
  • 1 T. Tamari soy sauce
  • 1 T. agave nectar
  • 1/2 c. olive oil
  • 1/2 – 1 tsp. sea salt

Place all ingredients in a blender and blend until smooth.  Store in the refrigerator in a mason jar.  Drizzle over salad of choice.

Makes 2 cups

This dressing keeps well in the refrigerator for about a week.  Maybe longer, but I’ve never tested it, because mine never lasts that long!
