Raw Foods Girls Go Greek

The Raw Foods Girls met last month for one of our biggest challenges yet.  We set a Greek theme, did a little research, and came up with an amazing feast made entirely of raw food. I’ve been looking forward to sharing this with you.  Kalí óreksi!

A Greek party couldn’t begin properly without hummus.  But this hummus is made with zucchini instead of beans.

Dallas made Raw Stuffed Grape Leaves that were incredible!  She used this Greek Raw Dolmas recipe from Love Raw Food Recipes for the filling.  And this Vegan Stuffed Grape Leaves recipe from Raw Food Recipes for the sauce.  Together, they made the best Dolmas I’ve ever had, raw or not.

We had a few Greek salads.  This gorgeous one featured hemp seeds and cilantro.

I brought a simple Greek Salad complete with sliced cucumber, basil, tomato, and olives.

But the highlight definitely was this beautiful Greek tapestry woven by Diane.

Raw Falafels with Mango Salsa and Tahini Sauce

Raw Falafels with Mango Salsa and Tahini Sauce

Falafel Ingredients:

  • 1 c. soaked walnuts
  • 1 c. soaked almonds
  • 1/2 c. sesame seeds
  • 1/4 c. chia seeds
  • 1/4 c. olive oil
  • 2 T. lemon juice
  • 1/4 c. parsley
  • 3 cloves garlic
  • 1 tsp cayenne or 1 jalapeno pepper
  • 1 1/2 tsp. cumin
  • 1 1/2 tsp. sea salt
  • 1/3 c. water

Mango Salsa Ingredients:

  • 2 mangos, peeled and chopped
  • 1 jalapeno, seeded and chopped
  • 1/4 c. diced purple onion
  • 1 medium tomato, diced (optional)
  • 2 cloves garlic
  • 2 T. chopped fresh cilantro
  • juice of one lime
  • dash of salt and pepper

Tahini Sauce Ingredients:

  • 1/2 cup tahini
  • 3 gloves garlic, crushed
  • 1/2 teaspoon kosher salt
  • 2 tablespoons olive oil
  • 1/4 cup lemon juice
  • 1 teaspoon parsley, finely chopped (optional)

Other:  4 c. of fresh spinach

Directions:

1.  Soak the almonds and walnuts for 6-12 hours.  Drain.

2.  In a medium bowl, combine all mango salsa ingredients, stir to coat, and chill until ready to serve.

3.  Combine all falafel ingredients in a food processor and chop until well combined.

4.  Mold falafel into 10 balls and set them aside.

5.  Blend all tahini ingredients in a VitaMix or food processor and set aside.

6.  Place a bed of spinach on a platter and top with falafels.  Drizzle a few tablespoons of tahini sauce on top reserving most for dipping.  Spoon mango salsa around the falafels.

Serves 6-8

But, wait!  There was dessert!  My greatest Greek accomplishment was finding this Raw Baklava recipe by Feed Your Skull and making a beautiful dessert for my raw friends.  The walnut-based cookies were stuffed with the most delicious cardamon, cinnamon, date filling.  You must check out the recipe for yourself.  Note:  I had to double the filling recipe.

We also had authentic Greek Ouzo.  I wasn’t a fan as I’ve never liked the flavor of anise, but when in Greece…

Our Raw Greek Potluck was definitely a success.  I’m beginning to think that any cuisine can be done raw.
