This summer has been all about keeping cool. I seriously haven’t turned on my oven since last month’s Adopt A Gluten-Free Blogger when I made Debbie’s Flourless Pumpkin Pie Cookies. And let me tell you, that was worth the heat! But for the most part, the summer has been about smoothies, salads, and other raw dishes.
This month, Adopt A Gluten-Free Blogger is being hosted by Sunny of And Love It Too. And I had the honor of adopting the host! I’m a big Sunny fan. She was one of the recipients of my Sunshine Award. As I explained on that post, “Sunny is a wife, mother of 5, and educator who somehow has time to spread sunshine around the blogosphere. I love her blog, her recipes, and her sunny outlook on life.” Sunny is awesome.
I instantly pinned her Strawberry Mojito Sorbet when she posted it because of her gorgeous dessert picture alone. Then I read the ingredients and realized what a healthy treat it was. It’s dairy-free, sugar-free, and made with all raw ingredients. Perfect as a snack or dessert during my Raw Foods on a Budget Bootcamp.
We love this sorbet! We enjoyed some immediately and then froze the leftovers in individual scoops on a cookie sheet.
You can make this delicious sorbet in a blender. No ice cream maker necessary.

I thoroughly enjoyed it!! Mint and strawberry is incredible. I almost made it with basil instead of mint because I had so much basil. I think I’m going to try that next time. Doesn’t it sound good?

It is gorgeous. Ditto on the idea of freezing it in individual scoops. I’ve never thought of that but it’s a great idea!
I just have to remember to take a scoop out and let it sit on the counter to thaw for 10 minutes before eating!
Wow, what a beautiful sorbet! I’ll have to go check that out. Although we do have an ice cream maker, I haven’t yet figured out how to use it ~ I’m excited that this can be made in the blender!

I absolutely love sorbet and it’s an amazing summer treat! My favorite is mango sorbet- mango is so creamy and sweet by itself that it doesn’t take much more than a date or two to make it perfect. Thanks for this!
