Chocolate Banana Chia Pudding

I first learned to make chia pudding from Gena of Choosing Raw. I don’t make it often, but I do eat chia seeds almost every day. They are great for pre-breakfast workouts. I put a spoonful of chia seeds in almond milk with a little protein powder, chug it down, and I’m out the door. That gets me through a spin class or a run. Chia seeds are also great for adding to your daily smoothies or morning cereals.

Since I’m a smoothie-for-breakfast kind of girl I rarely make chia pudding. Lately I’ve been straying from smoothies in the morning, because I’m so nervous about waking up the neighbors with the Vitamix! So I’ve been having green smoothies for lunch instead. Hopefully the newness of the building and my hypersensitivity will lessen soon as I realize that we all need to live our lives.

The Vitamix is ridiculously loud though. (Right, Brittney?)

So I’ve had fun playing with the quiet chia pudding process and found one that you might like.

Chocolate Banana Chia Pudding

1. Place all ingredients except cacao nibs in a bowl and mix together. Let it rest for a few minutes and then stir it up again. Continue stirring every 5 minutes or so for about 30 minutes.

2. Sprinkle with cacao nibs.

3. Eat immediately or leave in the fridge until you’re ready to eat.

Serves 1

    This sounds wonderful. I have been intrigued by chia seed puddings since I first came across them. I have a big bag of chia seeds in my kitchen but would like to find more ways to use them. If this is a breakfast pudding, I would want to add protein powder to bring up the protein levels to where I need them. I’m really looking forward to trying this recipe.

    I know what you mean about the Vitamix. My kids RUN when I start it. My son started calling it “The Loud” when he was a toddler…so when I am about to start the machine, I will say to the house, “Okay everyone, I am going to put on The Loud” and everybody takes cover. Ha ha. The worst though, is making almond butter in the food processor…those first few seconds are disturbingly loud with the almonds.

    This pudding looks great! Love the chocolate/banana combination. I have to say, I’m a big fan of chia seeds too. I give them to my kids quite a bit. Such a great thickener as well.

    You’re so sweet to be so considerate of your neighbors. You don’t want to be the new “loud kid” on the block. But you’re right, that hyper-vigilance will lesson in time.

  5. Mmmm this sounds awesome Heather! Apparently the water in my apartment will be shut off tomorrow, so I may actually give this a try for breakfast so I don’t have to worry about having a sticky smoothie mess to set ;p

    This chia seed pudding looks incredible, Heather! I’ve only made one chia seed pudding before – Gena’s Matcha Green Tea one, which you should try if you haven’t – but I definitely want to give this one a go. Best of all, I have all the ingredients in my cupboard already. :)
