Spicy Avocado Soup: Day 11

Spicy Avocado Soup: Day 11

I’ve made it into the double digits of my New Year’s Juicing Challenge! I’m still feeling really good. In fact, I think I have more energy this week than last. Now I wouldn’t want to go running, but I do feel good. I buzz about my day without even thinking about the fact that I’m not eating solid food. I enjoy the smell of good food walking by restaurants or cooking for the Husband. But I’m not craving it. Yet.

I mentioned on Day 6 that I enjoy a thicker juice or nut milk in the evenings. It ends my day with more of a satisfied feeling and prevents me from waking up hungry in the middle of the night. This Spicy Avocado Soup is simply juiced vegetables pureed with one avocado. This recipe serves 2, so in a half avocado I’m getting 15 grams of heart-healthy unsaturated fat, and 2 grams of saturated fat that leave me feeling satisfied. Plus, avocados are a good source of fiber, potassium, and vitamins C, K, folate, and B6.

And it’s delicious. The Husband calls it Liquid Guacamole. So if you’ve ever wanted to drink your guacamole, this is your chance.

I’ve tried a few different versions, and this is my favorite.

I’ve tried it with a half jalapeno and a whole. Half isn’t quite spicy enough for my taste buds, but let me warn you that juicing a whole jalapeno packs a powerful punch. Also, be careful breathing deeply around the juicer when juicing jalapeno. The molecules in the air can get caught in your throat creating coughing fits. Yes, I speak from experience.

This sounds like a great recipe but is it really necessary to run part of the ingredients threw a “juicer” then add to your Vitamix? I don’t have a Vitamix and I thought the vitamix would produce a velvety smooth consistency when making a smoothy on it’s own with out the added step of running it threw a juicer? Sure would like to your help to understand this better? Thank you and thank you for your awesome blog and for all you share, I enjoy it very much. Wishing you the very best this year.

  4. Wow – sounds like the juicing is going so well. Go you!
Love the sound of this “soup”. Sounds delicious.

  5. This soup sounds amazing. So good and so good for you!
I have experimented with avocado soups in the past but this recipe is one of the most delectable combinations of ingredients I have seen. I sometimes make a spicy avocado soup in my VitaMix when I want a creamy, savory treat. I am so glad I found your recipe at Wellness Weekend.
