Zucchini Hemp Banana Bread (Raw, Vegan, Gluten-Free)

I started making this bread on my last day of juicing. I knew that it would take most of the day to dehydrate it, and I wanted something healthy to chew just as soon as my 30 days were finished. These were the perfect healthy treat to look forward to.


Delicious by itself.


Or slathered with homemade almond butter.



Zucchini Hemp Banana Bread (Raw, Vegan, Gluten-Free)

  • 2 c. shredded zucchini (about 1 large zucchini)
  • 1 c. flaxmeal
  • 1 c. hemp seeds
  • 3 bananas
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1/2 tsp. salt


1. Shred zucchini and place in a large bowl.

2. Add flaxmeal and hemp seeds to large bowl and mix to coat the zucchini.

3. Puree bananas in a food processor and add cinnamon, vanilla, and salt while it’s processing.

4. Pour banana mixture into the large bowl and mix by hand until well incorporated.

5. Spread on 2 non-stick dehydrator sheets.

6. Dehydrate at 115 for 4 hours. Then flip onto mesh trays, remove the non-stick dehydrator sheets, and score each sheet of bread into 16 pieces.

7. Continue dehydrating for 3-4 more hours. Bread should be dry, yet pliable.

Yields 32 pieces

  2. The fat in the bread didn’t bother your stomach after not having any for the past few weeks?

      Veronica, the fat didn’t bother me at all. But I did have fat all throughout the cleanse in my nut milks. I also occasionally pureed an avocado in my green juices for extra staying power. I still need to share about how easy my transition was back to solid food. I will soon!

    I do not have a dehydrator !!
    Can I use my oven @ 200 and bake it just a little longer?
    Can you please give me a couple of ideas that would help!

      Nannette, you can absolutely use your oven. I haven’t ever tried it as I always use my dehydrator, but I’ve read accounts on other blogs. For this recipe I recommend that you spread the batter a little bit thicker on your cookie sheet, turn the oven to 200, and decrease the bake time. Check it every half hour to see how it’s coming along. Would you let me know how long it took you?
